Geographical location: The vineyards stretch from Bas-Rhin to Haut-Rhin, between the Vosges mountains and the Alsace plain, from Marlenheim to Thann. Vinification: Grapes are harvested exclusively by hand when ripe. Alcoholic fermentation takes place over 1 to 2 weeks, with temperature-controlled fermentation using yeasts selected for wines made from organic grapes. No malolactic fermentation to balance the product. The wine is racked, filtered and bottled after regulated ageing.
