Ageing is based on a winter resting period, favorable to the wine's stability (in color, aroma, acid balance). Batonnage (stirring of the lees) is avoided, in favor of the purity of fruit aromas.

Aroma
The grape variety with the most complex aromatic palette of all Alsace wines. The nose is intense, with an explosion of exotic fruits (lychee, passion fruit, pineapple, mango...), flowers (notably rose), citrus (orange peel) and spices (gingerbread, peppermint, clove, pepper). Frequent aromas of honey and ripe fruit also contribute to the incomparable richness of the nose.

Taste
On the palate, Gewurztraminer is full-bodied, well-structured and fleshy. A special feature of Gewurztraminer is that its freshness is always more discreet than that of other Alsace grape varieties. Retroolfaction reveals the full aromatic palette of the nose.
