The winemaker

As early as 1979, we began to focus on authentic, sustainable viticulture, and the old vines were preserved. Convinced that the mark of terroir in our wines is directly linked to the life of the soil, the 1st composts were applied in 1982. After the discovery of great biodynamic wines, our quality results from 1990-2000 (various international trophies and the title of Winemaker of the Year in 1993) no longer lived up to our expectations. In 2002, new training courses, visits and discoveries; certain ancestral and empirical practices find their explanation and extension in biodynamics. Since 1982, Domaine Albert Hertz has gradually reduced, then eliminated, the use of fertilizers and chemicals. He has adapted the soil, the vines and the whole environment to his philosophy: to produce authentic wines that express not only the grape variety, but also the terroir from which they are made, using natural means. Since 2006, Albert Hertz has taken the step of using the biodynamic method of cultivation. The grapes are still harvested by hand, and traditional vinification in oak tuns is complemented by the latest winemaking techniques. Biodynamic viticulture allows for natural creativity that can be transcended by all those who perceive and feel; earth and wine become a living organism. Man's complicity and respect for natural balances give rise to wines that are naturally more stable, tasty, mineral, saline and expressive, a reflection of their terroir and in perfect harmony.
