Vinified and aged the old-fashioned way. The full-bodied, powerful Cuvée Dame de la Pétoche is made from Vieilles vignes Madone grapes. It is then aged for 12 months in French oak barrels. The use of old barrels (4 to 5 years old) gives it a fine woodiness that supports and rounds it, while preserving its fruitiness. Maturing on fine lees nourishes the wine, making it an excellent wine for laying down. The name Dame de la Pétoche comes from the 1870s, when the chapel was only recently built. The Prussians, at war with France, did not invade Fleurie. Inhabitants nicknamed the chapel "Notre Dame de la Pétoche", convinced that it would scare off the enemy.
