The grapes are harvested at the end of September, when they have reached optimum aromatic and polyphenolic ripeness (aromas and colorants). Alcoholic fermentation takes place with the addition of selected yeasts and lasts an average of 10 to 12 days, with regular pumping over at a temperature of 25-27 degrees. Part of the Nero d'Avola is then aged in steel vats (30 %) to preserve the fruity, complex character of ripe red fruit. The remaining 70% ages for 8-10 months in French oak barrels, softening the tannins and giving the wine structure and body. At the end of this maturation period, the two wines are brought together again and rested for a further 12 months, first in steel vats, then in bottle, to refine.Color: deep ruby redBouquet: intense, spicy aromas of blackberries and raspberries.
