Color: very clear, almost transparent Smell: given the almost water-transparent color, in the bouquet, surprisingly intense aromas of flowers, citrus and white-fleshed fruit with a hint of herbaceous spices Taste: on the palate, juicy, lively, elegant and seductive, a subtle balance of aromatic fruit, fresh acidity, slightly nutty and mineral notes with a supple texture on the finish all the grapes were harvested at the end of August, in the cool of the night and early in the morning, to preserve the aromatic freshness of the berries on the estate, immediately separated by grape variety, placed in the presses and now pressed with maximum care to obtain a must of maximum clarity. Only the core of the cuvée was used to make the extra blanc, the must from both grape varieties was gently settled by cold sedimentation for 48 to 72 hours, then transferred to the fermentation tanks and slowly fermented at controlled cool temperatures of around 15 to 18°c. The low fermentation temperatures underline the fresh fruitiness of the wines and give the typical varietal aromas an even more intense expression. For extra richness and texture on the palate, gérard bertrand allows his extra blanc to age for a few weeks in stainless steel tanks on fine lees after alcoholic fermentation, before bottling and tasting.
