Doppio Passo is vinified from hand-picked, ripe primitivo grapes in the Salento region of Puglia. It owes its impressive, intense, full-bodied taste to a traditional production method that closely resembles that of ripasso di valpolicella. The special feature of this process is that, after the first fermentation, the wine is put back on the skins to ferment a second time. During this double pass (ital. Doppio passo), the wine once again extracts color, aroma and a seductive touch of sweetness from the skins.
