Harvesting takes place at night to keep the grapes as cool as possible before pressing, de-stemming and crushing. Fermentation in nitrogen-covered vats. Temperature-controlled fermentation (22-28°C). Racking twice a day until fermentation is complete. Total maceration between 10 and 15 days. Run-off of musts and pressing of pomace (pressure: 1.6 bar max.). Maturation of wines in vats. Blending and fining in spring. A cuvée selected from the Domaine's best plots for the quality and ripeness of the fruit. This cuvée is rich, powerful and well-balanced.
