Our 1987 vintage comes from the Fins Bois. The largest of our region's crus, it encircles the Grande Champagne, Petite Champagne and Borderies crus. Their eaux-de-vie - round and supple - age more rapidly, their bouquet reminiscent of pressed grapes.
Tasting notes
Appearance
Coppery-gold color.
Aroma
The first impression is of Boskoop and Canada apples, surrounded by vanilla and cardamom. On the second nose, there's a balsamic edge that rests on a woody base.
Taste
Round on the palate, with a melt-in-the-mouth texture. Retroolfaction reveals a touch of toasted coconut and brown sugar.
