In a few words ...

Pure Syrah. Granitic arena slope at 600 m altitude, facing south-southeast in the Lesquerde commune. Unique terroir, highly mineralized, quartz, micas, feldspars, all altered. Low pH, apparently poor soils, very draining, yet surprisingly fertile. Easy rooting, allowing good mobilization of water resources. Approx. 3-hectare plot, 30-year-old goblet vines, replanted in 2007 and put back on individual 2.10-m trellises. Severe pruning. Traditional green harvesting: disbudding, spacing out, moderate leaf thinning. Late-ripening plot. Technological rather than phenolic ripeness sought to preserve the "fresh fruit" tonality and enrich the aromatic palette. Rapid fermentation with frequent pumping-over. Maximum aeration. Vatting for 20 days, with the cap kept submerged. Early malolactic fermentation, moderate sulfiting and rapid clarification by successive rackings. Aged in vats for five to six months. Bottling in April/May, after gentle filtration to capture all the energy of the adolescent wine.

A very nice, inexpensive cuvée from Hervé Bizeul. It glides along and pleases the taste buds, with a very fresh, mineral and fruity mouthfeel. Enjoy with beef fillets marinated in a soy/shallot/chili sauce.
