This is one of the winemaker's exceptional cuvées. Named after one of Philippe's twins, this personal cuvée is made from Pinot Noir plots in Bué, pruned in Cordon de Royat, and in Bannon, pruned in Guyot Simple. Once the harvest has been sorted and pressed, Philippe selects the best juices to make this cuvée. A third is then aged in French oak barrels of different ages for 8 to 10 months. The wine is then blended in stainless steel tanks before bottling, softening the tannins. This cuvée is only produced in certain years, depending on yields and vintage quality. The woodiness remains discreet, bringing character and length to this exceptional wine. Fermentation is natural, using indigenous yeasts.
