The harvested grapes are destemmed and crushed. Once in the vat, it undergoes a week-long cold maceration prior to fermentation. Fermentation then begins, with numerous pump-overs and two delestages. Once fermentation is complete, the wine undergoes hot maceration for 15 days. The wine is then aged in vats for 6 to 8 months.
Appearance
Deep crimson with purplish highlights, limpid and brilliant.
Aroma
Complex, intense nose of fresh black fruit (blackcurrant, wild berries) with a hint of violet typical of négrette, on a spicy background (green pepper).

Heady, persistent. Suave, tender attack. The tannins are firm and melt into the fruit. A touch of liquorice on the finish. Good aromatic intensity. Intense aromatic persistence.
