The soils are ploughed superficially to avoid destructuring them; compost, horn dung and horn silica are used to contribute to the harmony between the different elements making up the soil (micro-organisms, minerals, trace elements, micro-fauna); harvesting is, of course, manual. In the cellar, vinification is spontaneous (using only indigenous yeasts), and sulfur is used in very limited quantities and not systematically. It is generally used a little on the juices before fermentation begins, and sometimes during aging. The wines are aged in barrels, demi-muids and foudres, for varying lengths of time depending on the grape variety and cuvée, but without new wood, so as not to mark the wines. The wines are matured on fine lees and racked according to the lunar calendar. Finally, gravity is used to transfer the wines. This estate's production is very interesting, especially when compared with the very reasonable prices. An estate to discover as soon as possible!
