The blend consists of 60% Chardonnay, 30% Chenin and 10% Mauzac. It was the first Crémant de Limoux, created in 1913. Today, it is made from the noblest white grape varieties: Chardonnay for its subtle, flowery aromas, Chenin for its freshness, and Mauzac for its "Limoux" origin and "structure". Traditional method. Temperature-controlled first fermentation in vats, blending of several years' harvests, aging on lees in bottles for 5 years, hand riddling and disgorging on the fly.
Tsar Nicholas II of Russia, an illustrious customer of the house, inspired this cuvée, named "Impérial" in his honor.
Appearance
A luminous golden hue with a fine, light mousse.
Aroma
Beautifully ripe. The nose reveals white-fleshed fruit (apple, pear, white peach) complemented by floral nuances (lime blossom and hawthorn), and blond notes (brioche and fresh walnuts).
