"terroir: the blend comes from a clay-limestone terroir resulting from the scree of the Larzac plateau, in the Pas de l'Escalette area. A relatively cold, windy microclimate with cool nights, conducive to the wine's freshness, fluidity, complexity and finesse. The altitude of this terroir marks the upper limit of vine-growing. Commune de lauroux.vinification: total destemming without crushing, each plot is vinified separately. Traditional vinification, working the must by punching down and/or pumping over. Vatting period: 3 weeks.ageing: 18 months in concrete vats. Unfiltered.Tasting: a wine with a beautiful aromatic structure, bursting with fruit, well-integrated tannins and a long finish. 2014 silver medal concours de lyon; 2016 gold medal concours général agricole; 2017 gold medal vignerons indépendants 2019; gold medal concours de lyon 2019; coup de cœur rvf novembre 2020; 2018 coup de cœur rvf juin 2019."
Aroma
A wine with notes of wet wood, slightly pared (reduction), followed by an explosion of ripe red fruit (blackcurrant, raspberry and blackberry), rubber, bark, new leather and iodine.
Taste
Crisp on the palate, present tannins give structure to this wine.
