VINEYARDS: Carignan and Grenache in Gobelet. Plantation "très pan et quar" 1.635 per square for Grenache and 1.40/1.80 for Carignan "à la provençale". Reasoned vine management depending on the vintage. PRODUCTION: 11,800 bottles. WINEMAKING METHOD: Hand-harvested, botrytis-free plot-by-plot sorting. Grapes de-stemmed, partially crushed, vat atmosphere put under CO². Grenache and Carignan blended in the vat. The vat is bled, the bled is coarsely cold settled and reincorporated onto the fruit. Fermentation takes place without exogenous yeast, at between 18 and 25°c, to promote "aromatic fermentation" (cf. Jules Chauvet). Cuvaison lasts only as long as fermentation. At the end of the sugaring process, the wine is racked and placed in a full vat. ELEVAGE: On lees in full vats with batonnage, malolactic on lees. Aged on lees. Sulfiting at end of ageing. Bottled in August. MISCELLANEOUS: The Cuvée is called "Comme a Cayenne" because the parcel of Grenache and Carignan was so hard to plant that Michel's mother 50 years ago used to go to Cayenne to work.
