Assembly : 80% merlot / 10% cabernet franc / 10% cabernet sauvignon vinification : bunches are hand-picked and sorted. Alcoholic fermentation begins naturally in temperature-controlled cement vats, with a 5-week vatting period. Malolactic fermentation in barrels. In new barrels for 18 to 24 months. Racking every 3 months TASTING : dark garnet-red color. The fruit is present and concentrated, with crème de cassis, blackberry jam and the delicate, fine woodiness of quality ageing making up the aromatic palette of this clos les lunelles. The wine's texture on the palate is pleasant, with a certain firmness in the tannins, which are still young. But these tannins are a sign of ageing, and the substance is built around them. The finish is salivating and slightly bitter, but this is a flavor that can be smoothed out with dishes in sauce, which will also round out the tannins.
