In a few words ...
The grapes are meticulously harvested by hand, in harvesting crates. The Merlot and Syrah grapes, harvested on the same day, were vatted for two days, then pressed. This short, temperature-controlled maceration produces fresh, low-tannin juice. The Cinsault was harvested and vatted separately, and left in vats until the sugars had been transformed, for eleven days of maceration at fairly low temperature. Once the Cinsault had been pressed, the wines were blended in stainless steel tanks. They are left to settle, so that malolactic fermentation can take place at the right late-summer temperatures. The wine is left on its lees until spring, when it is bottled.
