Cru Chénas is the smallest of the Beaujolais crus in terms of surface area, making it a rare wine. The climate is continental. This single 9-hectare plot, on a steep slope, faces east at an altitude of between 310 and 380 meters. The granite, covered with quartz crystals, gives this wine the distinct personality for which it is renowned. Hand-harvested, sorted and partially de-stemmed. An initial phase of semi-carbonic fermentation lasting a few days is followed by a period of regular "Bourguignonne"-style punching down and pumping over, for a total of 18 to 20 days of fermentation. Approximately 30% of the harvest is aged in oak barrels for several months, to achieve roundness and elegance in the final blending.
