The richness of a land and the passion of a man. The "Georges" cuvée pays tribute to pioneer and visionary Georges Vigouroux, who, in rehabilitating the historic Haute-Serre vineyard in 1971, recognized the potential of this terroir, a mecca for biodiversity. The grapes, sourced from the estate's best plots, produce a wine with silky tannins and aromas of spices and black fruits. Vineyard: Sustainable viticulture (HVE) Soil: Clay-limestone (Kimmeridgian limestone) Age: Jurassic, 150 million years old Typicity: iron concretions, red clay Location: On the slopes of the Cahors appellation Altitude: 300m ABOUT THE 2019 VINTAGE 2019 was mainly marked by a general drought. A dry winter with very little rain between February and April was followed by a mild, wet spring and a very hot, dry summer with significant heat peaks. These climatic conditions led to severe water stress in the vines and low yields, but the saving rainfall on August 15 enabled the grapes to continue ripening. The main hallmarks of this great 2019 vintage are freshness, tension and minerality, with relatively low degrees of alcohol (between 12.5° and 13°). VINIFICATION & AGEING - Strict control of vinification temperatures. - Aged for 12 months, 50% in 400-liter barrels before blending. - 20% of the volume is aged in amphora and 30% in vats to preserve freshness and fruit. - The wine rests in bottle for 12 to 18 months before release.
