"The fruit and spice of the delicately vinified Syrah Grenache, a complement of Mourvèdre for structure and the refreshing refreshing menthol touch of La Clape. A delicious, well-balanced wine to be enjoyed without complexes! Eric Fabre Harvest: Plot harvest spread over two months according to grape maturity. Grapes sorted before vatting. Vinification: Total de-stemming, gravity-fed vatting, traditional temperature-controlled fermentation. Long maceration (30 days) without crushing to extract the finest elements. Ageing: Development of aromatic complexity and natural stabilization for 18 months in vats. Natural stabilization, static clarification by gravity, no fining or filtration.
