"Even by the pool, I like full-bodied, long, expressive rosés. The rosé d'Anglès is equally at home at the table, where its structure will delight the most demanding gourmets. Eric Fabre Harvest: Staggered plot harvest according to grape maturity. Grapes sorted before vatting. Vinification: Total de-stemming, pressing of Mourvèdre and bleeding of Syrah and Grenache, gravity-fed vatting, temperature-controlled fermentation at around 16°C. Aging: Bâtonnage on fine lees in concrete vats for three months. Stabilization by light fining.
