With Chardonnay Les Jamelles, Catherine Delaunay wanted to showcase all her Burgundian savoir-faire. The result is a complex, elegant wine with a balance of freshness, fruit, finely wooded aromas and a rich, long, harmonious finish. 35% of the grapes are fermented in oak barrels (new and one-year-old). Alcoholic fermentation for 3 weeks. Aged in barrels on lees for 9 months, with regular "bâtonnage" (stirring of the lees) during which the wine undergoes malolactic fermentation. 65% of the grapes are fermented in stainless steel tanks at 18-20°C. No malolactic fermentation. Final blending before bottling.
Appearance
Attractive golden color. Beautiful clarity.
Aroma
Aromas of apricot and pear, even green apple. Notes of walnut and hazelnut, touch of white flowers (wild lilies), slightly buttery finish. Vanilla oak is very subtle and well integrated, with a subtle lemony note.
