Chante Cocotte is a 35-year-old Merlot, planted on a draining terroir of valley-bottom alluvium. Hand-picked, with sorting in the vineyard at the very beginning of ripeness and sorting on the table. The grapes are gravity-fed into the stainless-steel vats, where they are pumped over morning and evening. After 25 days of vatting, we blend in a proportion of 5 to 10% Grenache Noir, depending on the year. This blend is aged for 18 to 24 months in one- to three-wine French oak barrels. Chante Cocotte is enchanting, with unique aromas of cade, cedar and eucalyptus.
