In northern Burgundy, not far from Auxerre, the Chablis appellation stretches for some 15 kilometers around the commune of the same name. The monks of the Cistercian abbey of Pontigny were the first to cultivate vines in this region. Chablis lies on the southeastern fringe of the Paris basin. The soil is composed of clay-limestone marls found only here: the famous Kimmeridgian, a sedimentary geological layer from the Upper Jurassic period. The grapes used to make this Chablis at Domaine Long-Dépaquit come from a mosaic of terroirs, giving our wine remarkable complexity.
