Harvesting begins with plots in the village of Chablis, while those in Beines require a few more days to reach full maturity. We vinify our Chablis in stainless steel vats for both alcoholic fermentation (100%), activated by indigenous yeasts for 15 to 18 days at low temperature (18°C), and malolactic fermentation (100%). The first bottling of Chablis takes place in July following the harvest, and 10 months pass before the final bottling. This lively, fruity wine has a beautiful golden yellow color and a floral nose with a hint of white fruit (apple, pear) typical of the Chablis terroir. The Chablis has a very good initial taste, with mineral and acid notes, and a fine balance on the palate. A wine of finesse and freshness. Well-balanced, fruity and mineral, with a delicate hint of salinity on the palate, this 2017 vintage is already very pleasant to drink.
