Since the death of stéphane moreau at the end of august 2016, his wife virginie has taken over the domaine and is committed to continuing the direction taken to date. With meticulous work in the vineyard, long ageing and light filtration, the estate's Chablis wines are asserting their character, with depth and salinity. The domaine has now settled on long ageing processes that neither weigh down nor aromatize the local Chardonnay, here harvested just ripe. The result is a tasty Chablis that is never overbearing, but perfectly digestible, and that ages very well. Located in the locality of sécher, the soils here have a strong presence of limestone. This gives the wine a rather "taut" character, although the moreau-naudet wine is rounder and fuller than the dauvissat. However, the vines are on opposite sides of the plot, which probably explains this difference in character within the cru. The nose of this Premier Cru Vaillons reveals magnificent notes of yellow fruit, citrus and pear, with a hint of smoke. The palate is complex and straightforward, with a perfect balance between roundness and freshness.
