Caractéristiques : An old-fashioned grape variety with an intense garnet-red color. It is also known as malbec in the Bordeaux region, where it is used in the blends of the greatest châteaux. Soil and exposure : South / southeast exposure, on clay-limestone soils. Surface area: 2.5 hectares on 50-year-old vines with a yield yield of 35 hl/ha. Vinification : De-stemming, then sorting of the harvest on conveyor belts before crushing and vatting. Pigeage, délestage then long maceration of 5 to 6 weeks (no exogenous yeasts). Aged in uncoated concrete vats with micro-oxygenation.
