The winemaker
Since its emergence in 2012 in the Philippines, Don Papa has become a must-have. The brainchild of Stephen Carroll, this molasses rum is a resounding success. Its origins nestle on the island of Negros, nicknamed "Sugarlandia", where its aromatic sweetness and syrupy texture seduce connoisseurs and neophytes alike.
The island of Negros, a fertile land with volcanic soils, has established itself as a blessed terroir for sugar cane. Local molasses, rich in sugar, is distilled in columns and aged in American oak barrels, giving birth to Don Papa rum.
The secret of Don Papa's success lies in its gourmet taste. Before aging, three grams of sugar per liter are added, offering a unique experience. The name "Don Papa" pays homage to Dionisio Magbuelas, aka Papa Isio, a 19th-century Filipino revolutionary figure. A foreman and healer, his portrait adorns the bottles, embodying the brand's rebellious spirit.
Don Papa's diverse range includes limited editions such as Don Papa Sherry Cask and Don Papa Rare Cask, with fruity, gourmet aromas. Innovation continues with Don Papa Rye Cask, an alliance between American whiskey and rum, and Don Papa Gayuma, matured in whisky casks for smoky nuances.
