The winemaker
Located in a glaciated valley in the Wicklow Mountains, Glendalough Distillery aims to revive the heritage of Irish craft distilling in the 18th and 19th centuries, when over 200 distilleries produced a variety of alcoholic beverages such as poitín, whisky, gin and absinthe. Glendalough is the perfect choice for the distillery's location, as the art of distillation in Ireland has its roots in the monasteries where stills distilled precious nectars, notably in Glendalough. The distillery uses fresh, wild ingredients harvested in the surrounding mountains to produce mainly whisky, poitín and gin. Their whiskies include a range of single malts, single grains and Pot Stills, aged in bourbon casks and then finished in a second or third cask to offer a surprising range. Their poitín is distilled three times in a traditional copper still from malted barley and spring water, while their gin range will appeal to connoisseurs.
