The winemaker

The Foursquare distillery occupies the site of an old sugar refinery dating back to 1636, the oldest in Barbados. Construction of the distillery began in 1996, on the site of the former sugar mill, which had closed in 1984. It produces molasses rums in two types of still: light rums in a Coffey column still, and heavier rums in a pot-still. The Foursquare distillery distinguishes itself from the others by blending the rums from its two completely different stills before casking. It's this very special blending that sets the distillery apart.
