Terroir : We differentiate Bouthéran from other wines by its terroir and exposure. Bouthéran is located on a south-facing hillside with slopes of up to 40%. The soil is composed of decomposing rock and granite. The vines grow on a bed of pebbles that captures the sun's heat during the day and releases it at night. This particularity enables us to produce very ripe grapes of excellent earliness. Vineyard management: Vines grow on the Bouthéran hillside in difficult conditions. The poor soil and exposure limit grape production and facilitate concentration. These low volumes allow the terroir to express itself. Vinification: The Gamay St. Romain grape thrives on sandy soils to express fruit. But on stony slopes, it brings out aromas of red berries, violets for the floral side and pepper for the spice. Bouthéran is vinified separately from the other cuvées, over periods of 10 to 12 days, so as to give priority to the wine's structure and typicity. After 6 months' ageing, Bouthéran asserts its own character.
