For three generations, the Latorse family has been making wines as a family. On their estates in the entre-deux-mers region, they cultivate both the vine and the pioneering spirit. A pronounced taste for boldness and innovation, in the service of their wines, passed down from father to son. The soil of the Château l'ombrière vineyard stretches over slopes with clay-gravel soils, perfect for vine-growing. The latorse family does everything possible at every stage to produce quality wines: modern winemaking techniques, electronic temperature control, long maceration. Traditional vinification, cold pre-fermentation maceration. Pigeage and remontage during fermentation at 28°c. Vatting for about a month before separating the marc from the wine. The temperature of the wine is then maintained at 22° for malolactic fermentation, followed by the 1st racking.
Aroma
expressive nose intensely fruity (raspberry and wild strawberry), enhanced by toasty and burnt notes.
Taste
the palate is full-bodied, blending mocha with morello cherry juice. Solid tannins make the finish of peony and burnt caramel last.
