Hand-picking, short cold skin maceration, whole-cluster vinification - with the stalks - enriches the wines' range of aromas, and slow, gentle pressing under inert gas to protect the pressed juices from oxidation. Our efforts have not been in vain: Blanc de Rolle 2017 brings freshness supported by a lively, persistent structure. The aromatic profile is delicate, with aromas of white fruit, white f... lowers, hawthorn and a hint of boxwood.
