Color: deep cherry red with ruby-red rim Smell: on the nose, intense varietal aromas of black berries, blackberries and licorice, finely underscored by the spicy, sweet notes of oak aging (vanilla, coconut) Mouth: on the palate, juicy, powerful, well-structured and harmoniously balanced with perfectly integrated oak and a fine persistence of cherries and cocoa the grapes for beronia tempranillo monocépage are hand-harvested from mid-October and sorted severely right in the vineyard. In the cellar, they are first left to macerate cold for a few days in a stainless steel vat to concentrate the first color pigments and tannins from the berry skins, before fermentation begins at a controlled temperature of 26°c. Regular "bâtonnage", or stirring of the lees during the 14-day fermentation period, gives the wines even greater aromatic richness and complexity. Once alcoholic fermentation is complete, the wines are racked and aged for eight months in 'mixed' French and American oak barrels, specially designed for beronia. This is followed in March by bottling and a further six months' storage in the bodega's cellars, before beronia tempranillo is finally released for sale. Allergene:enthält sulfite
