Boris champy is originally from champagne and has a degree in œnology. He worked for 10 years in California's Napa Valley before becoming technical director of the House of Louis Latour. He was also manager and oenologist at the famous clos des lambrays. An all-rounder, he has initiated an environmental protection association, is a triathlete, has swum across San Francisco Bay and completed the pilgrimage from Dijon to Santiago de Compostela. The domaine was founded by didier montchovet in 1984. With the complete takeover of vineyard, cellar and stocks, domaine didier montchovet was renamed domaine boris champy. Boris champy is an enthusiastic believer in the future of the hautes-cotes, thanks to their altitude in a context of global warming. His aim is to continue to raise the profile of this little-known appellation. The aim is to show the subtle differences between climates and terroirs, with different types of soil, sun exposure, slope inclination and so on. The domaine was the first in Burgundy to receive biodynamic demeter certification.le beaune premier cru comes from a 21-acre parcel known as vignes franches. A small percentage of whole bunches are fermented, with delicate extraction during vinification.
