This wine is made from two different types of cuvée, each coming from a different parcel chosen for its specific character. Vines between 50 and 80 years old, vinified in two vats, carbonic maceration for fruit and freshness, and the age of the vines for power. The whole gives this wine an impression of strength and suppleness. Produced from densely planted vines (11,000 vines/hectare) on sandy, granitic mid-slope soil, this is the earliest ripening area in Beaujolais. Whole bunch vinification takes on its full meaning, harvested by hand to respect the integrity of the grapes at all times. No sulfur is added during vinification, and fermentation starts naturally thanks to indigenous yeasts. Maceration from 10 to 20 days, depending on the cuvée. The wine, freed from coarse lees but on fine lees, is kept in vats for 6 to 7 months before bottling, the date of which varies only according to the moon. This cuvée expresses the fruit and complexity of the small corner of this land on which it has grown.
