Violet-blue to purple in color, the fragrance reveals berries, bananas, leather and caramel. The taste is fruity with hints of wild herbs. Backsberg controls the degree of ripeness of the grapes right from the vineyard, and concentrates yields by pruning the vines. Instead of simply harvesting ripe grapes, Backsberg prefers to harvest 'ripe' vines. Harvesting takes place at night and is exclusively manual. Controlled fermentation at around 28°c. Storage in steel vats, with little influence from wood. The wine is kept in bottle for 6 to 12 months before being sold. Founded in 1916, the backsberg estate, with some 110 hectares of vines, is now run by the third generation of michael back. His son simon is now part of the management team and is responsible for wine production. His philosophy is strictly focused on quality, which has given his wines an individual and unmistakable style over the last 30 years. The vineyards are mainly located in the border region between stellenbosch and paarl, and enjoy a temperate climate in winter and fairly warm temperatures in summer with average rainfall. The estate is a pioneer in the production of co2-neutral wines and, in addition to environmentally-friendly production, is implementing afforestation projects to offset excess emissions.
