The winemaker

William Downie is a cheerful iconoclast, a self-critical perfectionist who has always flouted convention to follow his own path. An expert in pinot noir and a proponent of minimalist winemaking long before it became fashionable, he first selected his grapes in various cool regions of Victoria before settling in Gippsland. In 2006, he acquired a farm in the foothills of the Strzelecki of the Strzelecki mountain range, a particularly cool and humid area. His many stays in Burgundy inspired his viticulture and convinced him that the expression of terroir required high-density planting, organic viticulture, manual harvesting, sober, non-extracted, whole-berry (but destemmed) vinification and tailor-made ageing. No temperature control, no filtration No temperature control, no filtration, just a pinch of sulphur during pre-bottling: everything is done to let the personality of each plot and the purity of the fruit express themselves as naturally as possible. Floral, airy, light or sanguine and structured, the range is simply fascinating and cannot leave lovers of great Burgundies indifferent.
