The origin of this cuvée: L'Arrêt-Buffatte is the name of the parcel of land along the ancient Roman road linking Paris to Clermont-Ferrand. It was once a stagecoach stop where travelers stopped for refreshments. Cultivation: Age of vines: 45 years Exposure: South-West Vine density/Ha: 6,400 vines Surface area of vines: 3.7 Ha Yield: 52 hl / ha Harvesting: Mechanical Vinification Natural cold settling, low-temperature fermentation, pumping over, successive stirring of the lees at the end of fermentation. Traditional temperature-controlled stainless-steel vats. Late bottling for natural enrichment of fine lees. No malolactic fermentation.
