It was to seal their friendship that paul perarnau and willy roulendes decided to settle in burgundy to make wine. Their two profiles, however, are very different. Freshly graduated with a bts in viticulture and oenology, willy spent a few years at domaine de montille, near volnay, where he learned the rigors of burgundy and biodynamics. He then took charge of the Clos du Moulin aux Moines in Auxey-Duresses, where he put his solid knowledge of local terroirs to good use in his winemaking. At the time, paul was still working in england for an importer, before returning to france to spend a year as a vineyard worker for the legendary dominique hauvette in provence, before moving on to champagne for two years at domaine bruno paillard. from their first meeting at clos du moulin aux moines, the two became friends, and decided to go into business together. Today, domaine ami cultivates 4 hectares of vines in the maranges region: aligoté, red and white burgundy, maranges 1er cru la fussière, as well as grapes from winegrower friends in the surrounding area, so as to be able to vinify parcels located in the maranges region.
