A 100% Viognier! VINEYARDS Certified Organic since the 2015 harvest, respect for the vines is one of our priorities. VINIFICATION As September can be very hot, the grapes are harvested in the middle of the night. After de-stemming and pressing, they rest for 24 to 48 hours at very low temperature. Once racked, alcoholic fermentation takes place in new French oak barrels for around 20 days. AGEING AND PACKAGING Aging continues in new barrels for between 4 and 6 months. At the end of winter, the cuvée is bottled for the first days of spring, and should be enjoyed within 24 months at around 8/10°C. TASTING The palate is balanced between the wine's complexity and the harmony of its aromas. Beautiful expression of pear, chestnut glacé and floral notes. A perfect accompaniment to aperitifs and seafood dishes. Or pair it with a fillet of red mullet with a lemon butter sauce, for example.
